Your fins should be fine. They're made pretty much exactly the same as mine are (autoclaved 1/8" carbon core with 2 layers of CF over them, and then mine have a layer of glass just for the finish), and I'm pushing mine up to 2.4 or so at Mayhem (actually, I should be able to give you some nice stiff competition for the highest flight of Mayhem :D). They certainly look nice and solid.
The plate I had was about .100 It varied about from . 097 to .105
I ordered on line, a couple of 3/32 router bits for the slots. Took me a couple of days to find them. I bought 2 in case I broke 1
The smallest I could find locally, was 1/8"
If you lose a fin during a stable boost - even at Mach 2, I'll rebuild it for you and maybe even buy you another motor. Those fins are ON there and ain't coming off. (Unless you sanded through the carbon that is)
Nope, I stopped when I broke through the layer of epoxy last night.
I will paint another layer on tonight. Still have a few divets to get out.

Found a crack in the fillet on the sled in my mobile ebay from the launch today. The all thread is loose.
Cant have the Altimeters banging aroud in side.
(Cracks remind me of the Space Shuttle a few months back 😯 )
Just cant justify a rush to dismount everything and remount it in the morning after the glue is dry, and to try to waive off the weather for a shot.
There are some other factors involved as well with the ebay that complicate things and dont make the rush worth it to me.
Dont want to risk all that money in the hardware.
Plus, my GPS was 200 yards off today from where the rocket was. Thats another concern. 😕
